I have found that living tissue is sometimes found quite close to the end of long toes. Cutting into that tissue would cause the possible infections. Best not to do that.
Rather than trimming the toes, try to determine the root cause and remedy that. If genetics, then that's a tough problem to fix, however, If the problem occurs with animals of different genetic background then an environmental cause is indicated.... terrain, feed, exercise????
Just Letting the toes grow out may work as well. I have noticed that when allowed to go out, they go to a certain length and then naturally spall off. One of my herd bulls gets long toes over the year and then wears them off at breeding time running around chasing the girls.
