GOOD QUESTIONS!!!
I have asked some of these myself with no real answers. Any Korean I have spoken to, and the research out of Canada seems to back this up, says that the larger bulls with wider fans have more metabolic activity in the fan part of the antler and are therefore purchased as a premium. I have also taked to Japanese/Chinese, Thias that will always choose younger aged velvet cut around 45 days - saying that has the best medicinal properties.
Lets face it - nobody knows - yet.
Three or so years ago everyone was looking at drydown weights to try to evaluate velvet performance. What I found was that if you left the end unwrapped it dried some in the freezer before it got to the processer. When they weighted it before processing and then again after drying it would get a better drydown rating when in fact it was not superior velvet. I discarded that as a way of evaluating velvet after that experience.
It would be wonderful if there was some way to analize it on the head and that has been tried but nothing cost efective has come of it. It would also be nice to be able to test it an evaluate it in the cut green stage before processing so that we could truly identify superior velvet and breed our animals accordingly.
