Some of the dark color is genetic, some of it diet, some of it what they rub on when they are polishing their antlers. For example, I had one bull with silver antlers a couple of years ago - the only thing available for him to rub is velvet off on was a cable fence painted with aluminum paint - they are sure strange looking sheds!

Once they shed you can darken the antlers with a variety of products some of which are very realistic looking and some of which aren't. You can use stains that you use on wood (if you are talented these can look really good) and the amatures can soak the outside in a mixture of very strong coffee which puts a nice stain on it. Avoid the tips and never let the burr set in the solution or it will really look like a fake antler.
