Out here in CO the going price for elk meat is about $3.00 to $3.50 hanging weight which is about $1.80 per lb live weight. Once the animal has been cut and wraped the price is higher due to the added cutting costs, scrap loss and the lessened demand for lesser cuts. As such, I sell wholsale to resturants and other vendor at a 20% to 30% discount to retail price. I.E. if I sell Sirloin steaks at $17 then the local Cafe can buy them for say $12.75. This may not be enough for some vendors ... but it helps retain my margin on the few animals I process.
