North American Elk, or Wapiti, are considered by some to be an exotic animal but the Roosevelt (also called the Olympic), Manitoban, Rocky Mountain, and Tule Elk are a viable industry livestock. Ranchers and farmers are discovering the magnitude of elk as an investment in the future with three separate and thriving markets:

  • Elk meat not only has a very pleasant taste but is also very low in both cholesterol and fat.

  • Elk antler velvet has been used in the Orient for medicinal purposes for thousands of years and is now being discovered by consumers on this continent.

  • Trophy elk are in high demand by North American hunters.
